Steamed sweet dumpling squash with lime and butter

Take traditional steamed squash to the next level with a dressing that uses only four simple ingredients. The tartness of lime and the savory, rich flavor of butter combine with the mild, sugary taste of Sweet Dumpling squash for an appetizing, quick side dish. Their smaller size is perfect for individual servings!

Yields: 2 servings
Rinse before cutting. Cut squash in half lengthwise, slicing slightly off center to avoid stem. Use vegetable peeler to remove most of skin, leaving indented green stripes. Halve each piece again, to make lengthwise quarters. Set pieces on steamer rack over boiling water, skin side up. Cover and steam until tender, about 15 minutes. Make lime and butter sauce while squash cooks.
Melt butter, stir in lime juice, sugar/or honey, and chili powder to taste. Spoon over squash and serve at once.
Sweet Dumpling squash: Allow 1/3 to 1/2 pound per person. Or serve baked halves of smaller squashes as individual servings
1-1/2 tablespoons butter
About 1-1/2 teaspoons lime juice
Pinch sugar (or substitute honey)
Cayenne pepper or ground pure chili powder to taste
