Add 1/2 tsp of brown sugar into each compartment of a buttered muffin tin, and one slice of golden Kiwi. ⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Blend your butter and sugar until creamy, then add in your egg.
Combine with the flour, baking powder and orange juice. ⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Spoon 2-3 tablespoons of your batter on top of your Kiwi slices and bake at 325° for about 18 minutes.
After cooled, roll the top of each mini cake in your toasted coconut and thoroughly enjoy.
TIP : If your brown sugar is keeping your cakes in the tin, we found it easiest to give em' a twist and they come right out.

1/2 cup softened butter
1/2 cup sugar
1 1/2 cups flour
2 tsp baking powder
3/4 cup orange juice
1 cup toasted coconut
