Coat the red potatoes, sliced yellow onion, and jalapenos in your olive oil and salt, and roast at 400'F for 40 minutes.

Smash / blend / Fruit Ninja your ripe avocados until creamy.

Stir avocado mash into your carmelized onions, diced potatoes, and seeded diced jalapenos.

Add salt & pepper to taste and you are GOOD...TO...GO!


2 avocados

1 yellow onion

2 lbs red potatoes

2 lg jalapeno peppers

2 tbsp olive oil

1/2 tsp salt
