Get Your Green & White Asparagus from Northwest Growers!

Longer days and warmer nights have spears of organic asparagus poking up from their beds in the Pacific Northwest, much to the delight of eaters and growers! Once considered a fancy food, asparagus has become a mainstay in the kitchen, and shoppers are finding ways to incorporate it into meals any time of day. 


The verdant hue of green asparagus is sure to enliven springtime displays. Bunches of these long, slender spears look gorgeous in racks and are enhanced when merchandised alongside red radishes, purple artichokes and yellow lemons. Pops of color from other produce really help showcase its lovely grassy hue and entice eaters to pair it with other seasonal offerings. 


Perhaps less familiar to shoppers, but worth creating a buzz around is elegant white asparagus. Requiring extra work on the part of the grower to cover these spears with dirt or tarping as they grow, the lack of photosynthesis results in its rosy-tinged, alabaster appearance. White asparagus has a more mellow, sweeter flavor than green asparagus, and requires a slightly different preparation. Generally thicker and more fibrous at the base, it’s recommended that eaters peel or thinly slice the bottom two-thirds to ensure each bite is tender. A little more work, but the rewards are worth the effort! White asparagus is stunning on the plate and palate and easily elevates meals. With a vastly shorter window of availability than green, be sure to bring it in while you can!
